“Mulan,” 7 p.m., Disney. This 1998 animated adventure is based on a Chinese folk tale about a girl who disguises herself as a soldier. Mulan and friends fight the invading Huns. She becomes a national hero.

“Tattoo Highway,” 9 p.m., A&E. Thomas (above) and his team are not having fun. As Beej deals with relationship issues, Nacho eats something that doesn’t agree with him — a stencil sheet — and gets sick.

“Top Chef Masters,” 9 p.m., 10 p.m., 11 p.m., Bravo. Chefs Anita Lo (above), Douglas Rodriguez, John Besh and Mark Peel must cook eggs with one hand tied behind their backs. Neil Patrick Harris (“How I Met Your Mother”) is a judge.

“World’s Toughest Prisons,” 9 p.m., National Geographic. Cameras capture the gritty reality of Santa Martha in Mexico and Lurigancho in Peru, where inmates strive to survive in a world of corruption, power struggles and chaos.
